Recipe of the Week; STRAWBERRY SHORTCAKE- MY WAY

Do I REALLY need to post a recipe for strawberry shortcake? Probably not, anyone can grab a pound cake from the bakery and top it with strawberries and whipped cream.

But that's not strawberry shortcake to me.

Mom always made her shortcakes with Bisquick biscuits. Usually, you can find the recipe for these biscuits right on the side of the big, yellow box. Just in case you can't, or you use a store-brand mix, here it is. It's ridiculously simple-


2 1/3 cups Bisquick baking mix
3 tablespoons butter, melted
1/2 cup milk
3 tablespoon sugar

Preheat oven to 425 degrees. Stir baking mix, melted butter, milk and sugar in bowl until soft dough forms. Drop by tablespoons on to an ungreased cookie sheet (I prefer to line mine with parchment paper to avoid over-browning the biscuits.) Bake 10-12 minutes, or until golden brown.

While your biscuits are baking, prepare strawberries. Approximately one pint of berries is enough for this biscuit recipe.

Cut stems of berries and slice into desired thickness. Sprinkle with granulated sugar and allow to rest for at least 15 minutes. Use as little or as much sugar as you prefer.

When the biscuits and strawberries are ready, start by breaking up enough biscuits for one portion into a bowl. Spoon sliced berries on top, then pour a little milk over everything, as you would with cereal. You may sprinkle additional sugar over the biscuits and berries.

That's it- enjoy! I never use whip cream, but you certainly may if you'd like!
